Veg Fried Rice

Veg Fried rice is something I can never get enough of! I make different versions of this fried rice at home;today's recipe is something I have adapted of late. Though not exactly my DH's favorite, it tastes delicious and comes very close to the ones we get in the Thai, Cambodian restaurants here. This version calls for using Sriracha sauce or the hot chili sauce and the vegetable flavor bouillon cubes. The key flavor for this rice comes from the flavor cubes, so try not skipping it. As for the chili sauce, you can chose to skip it or use it according to your taste.

Veg Fried Rice

 

What we need:

Basmati Rice / Long grained rice - 1.5 cups
Onion, medium sized, thinly sliced - 1
Carrots, thinly sliced - 1/4th cup
Green Cabbage, thinly sliced - 1/4th cup
Green Pepper/Capsicum, thinly sliced - 1/4th cup
Green Onions/Spring Onions, chopped - 1/4th cup
Ginger-Garlic paste - 1 tbsp
Green Chili paste - 1 tsp, Optional
Salt - as needed
Black Pepper powder - 1 tbsp
Water - 2 and 1/4th cups
Olive Oil - 2 tbsp
Sriracha Chili sauce - 1 tbsp, Optional
Vegetable bouillon cubes - 1 (I use Maggi brand)

How to do:
  1. Wash, clean and soak the basmati rice for at least half an hour, but not more than 1 hour.
  2. Drain and cook the rice with 2 and 1/4th cups of water, a few drops of oil and about 1/4th tsp of salt. For basmati rice, rice to water ratio is 1:1.5. If you are using pressure cooker, cook the rice till one whistle. Oen the lid immediately once the steam is completely released.
  3. Spread the cooked rice in a plate or bowl, and separate the grains. 
  4. Heat olive oil in a wok. Add the onion, green chili paste and ginger-garlic paste. Saute till the raw smell of garlic leaves.
  5. Now throw in the carrots and green pepper. Saute them until they turn tender and still crunchy. This may take about 3 to 4 minutes.
  6. Now add the cabbage, half of the green(spring) onions and saute them.
  7. Once the cabbage shrinks and starts to wilt, add the sriracha sauce (if using).
  8. Crush the flavor cube and add it. As you keep stirring around, the cube will dissolve and get incorporated with the vegetables.
  9. Now add the pepper powder and very little salt (just for the vegetables). Mix well.
  10. Slowly add the cooked rice and gently mix with a wooden spatula, taking care not to break the grains.
  11. The final step is to check and adjust the salt and seasoning according to your taste. Remember, the sauce and flavor cube has some salt, and we have also added salt to the rice.
Garnish with the remaining green onions and serve.
